As most of you will know, the sour cherry is a fruit that comes out once a year and for a short period of time.
Since the very old days, even when the abundance of sweets in the market was small to nonexistent, housewives made sure to make it as a spoon dessert. They made it in large quantities and kept it in their cupboards, where they could serve their guests at any time during the year.
In fact, in the book "The Witches of Smyrna," the Greek writer Mara Meimaridis makes a great reference to the elaborate work of creating the dessert and the custom of offering it to visitors by the housewives who lived in Smyrna before the Great Catastrophe and the persecution of 1922.
